Floating Malteser Cake for Comic Relief

Floating malteser cake for Comic Relief showstopper

 
 
Comic Relief is a hugely popular UK charity and the work it does to tackle poverty and social injustice around the world is fantastic. It has been going for 25 years this year and Red Nose Day – and now Sport Relief too – has become part of the British lexicon. Comedians and celebrities have been doing “something funny for money” since I was a child; last year Sport Relief (which takes place in alternate years with Red Nose Day) raised a whopping £71,800,000.

This year Red Nose Day falls on Friday March 13 and people all around the UK are being encouraged to “make their face funny for money”, whether that’s wear a wig, face paint, or have their eyebrows shaved off for charity. Comic Relief has also teamed up with the Great British Bake Off to help people organise bake sales in their communities or workplace – there’s nothing the British like more than a good old bake sale.

For that reason I’ve found myself pledging to make cakes for two different bake sales, one helpfully taking place the day before. I thought I’d share with you the cake that I’ve made, so if you are having a bake sale (or a bake off – this is something of a showstopper!) on Friday, you’ve still got time to make it.

Maltesers is one of the official partners of Red Nose Day this year and everyone loves chocolate, so I decided to make a maltesers cake. I’d seen pictures of cakes before which looked like they had a bag of Maltesers floating in the air, pouring chocolates onto the top of the cake – and since Red Nose Day is all about silliness and fun (with a good cause) I thought this would be the perfect cake.

My friend Ros aka The More Than Occasional Baker has made one of these cakes before and as I was fairly short of time, I went to her site to find out how to do it. I even used the same chocolate cake recipe she had used so I can’t claim any originality with this recipe at all – please hop on over to Ros’s site! The only change that I made was to use purely Maltesers rather than M&Ms as well.
The cake was pretty easy to make; you might be better off making it a day or so in advance and keeping in an air tight container if like me you are assembling the cake after work, as it needs to be completely cold.

Making the cake - see link above for recipe. In goes the chocolate, cocoa powder, butter and water.

Flour and eggs of course, and sour cream is the added ingredient to make this cake extra moist and tasty.

So this is the tricky part... to assemble the cake you need a lot of chocolate ganache. A lot.
Heat 300ml double cream in a large pan and when it is just simmering, take off the heat and add 600g chocolate. You can use plain or milk; I used milk as I prefer the flavour. Stir in the chocolate until it has melted.


Leave the ganache to cool before using - I put mine in the fridge for about half an hour.


Spread about 1/3 of the ganache on the bottom layer of cake and gently sandwich the other cake on top. Then spread a thin layer of the ganache around the side of the cake and stand up Kit Kats around the sides, facing inwards so the flat side faces outwards. I used 36 Kit Kat fingers for what I think was an 8-inch cake. You can either put them completely around the cake or as I have done, leave a gap at the front.


Spread about 2/3 - 3/4 of the remaining ganache over the top of the cake.


Push a plastic drinking straw into the cake, far enough in so it is stable but so you have plenty sticking out the top. Cover the top of the cake with Maltesers. Don't forget to keep one of the empty packets as you will need this later!


Slowly start building a tower of Maltesers. Dip each one in the chocolate ganache so it has a little dot of the chocolate mixture on it. Carefully stick to the straw, building up from the bottom. I found that I had to put the cake in the fridge after every two or three Maltesers, otherwise they would start to slide down.

Finally use some more ganache to stick the empty Malteser packet to the bent top part of the straw and finish sticking the Maltesers so the straw is completely covered. For the finishing touch I stuck more Maltesers down the front of the cake and on the cake board to look as if they were overflowing.

I'm really pleased with this and think this is the perfect cake for Comic Relief - it's fun and Maltesers is one of the official sponsors. I just hope it makes it into work on the train and bus OK!

Roast Chicken with Zesty Chickpea Stuffing



This is a variation on a roast chicken recipe that you could try over Easter. The recipe comes from Franglais Kitchen, though she says to use a whole can of chickpeas and I could only get half a tin into the cavity. So once you have the chicken that you plan to roast, you need:
half a can of chickpeas
half a lemon
1/4 tsp cumin
1/4 tsp garam masala
pinch of chilli flakes
salt and pepper

Mix the chickpeas with the seasoning in a bowl


Spoon inside the cavity of the chicken and block the gap with half a lemon


Roast the chicken as normal, remembering to add on the cooking time for the extra weight of the stuffing


Carve the chicken and serve with the spicy chickpeas

Za'atar Bread Rolls


 I bookmarked this recipe for za'atar bread rolls- spellings also include zaa'tar and zatar- as I thought it would be a good entry for Alphabakes when z came up, which it finally did this month. Za'atar is a Middle Eastern spice blend made of oregano, thyme and sumac - sumac is something I've never been able to get hold of in the supermarket so I didn't hold out much hope of finding za'atar, so I ordered some over the internet.

The recipe comes from a blog called Cutchi Kitchen; I halved the quantities and rolled them up rather than twisted them, and left out the milk powder as I didn't have any, but other than that followed the recipe exactly.

Mixing the ingredients in a bowl:

Sprinkling over half the dough


After placing the other piece of dough on top, I cut strips using a pizza wheel and rolled them up.


After baking in the oven:


I ate the bread rolls with some homemade soup. The spice blend didn't have a particularly strong flavour but it was distinctive and went well with the soup.

Chocolate and Peanut Butter with Reece's Cups Cupcakes


I bookmarked these cupcakes a long time ago after Ros from The More Than Occasional Baker brought them to my birthday party - but it took me a long time to get around to making them. You need Reece's Peanut Butter miniature cups, which I've never found in the UK - does anyone know if you can buy them here? I went to America last September and bought a bag, but then ate them all before I got around to making the cakes! Then my boyfriend's mum went to America last month and very kindly brought me back a bag. This time I made sure I baked the cupcakes before I ate all the peanut butter cups!

I recommend you go to Ros's website to get the full recipe for these amazing cupcakes. Hers definitely turned out better than mine as my icing wasn't stiff enough to pipe though. Here's what I did:

Cream the butter, sugar and peanut butter



Add the eggs and vanilla


Spoon into cake cases


Here are my lovely miniature peanut butter cups all the way from America!


Gently push a peanut butter cup down into each cupcake so the top is just showing.


While they are baking, make the buttercream from butter, icing sugar and melted chocolate


The cupcakes are done - the peanut butter cups hold their shape really well!


Pipe the buttercream on top. I don't know why mine was too runny as I followed Ros's recipe exactly and hers look perfect!


Decorate with Dr. Oetker gold pearls.

 
When you cut into a cupcake you can see the Reece's cup - and you can definitely taste them!

I took these cupcakes into work for the Macmillan bake sale. They were very popular, even if the icing wasn't to my usual standard!

Hershey's Kisses Chocolate Brownies





For my birthday last year Ros made some amazing chocolate brownies and I bookmarked the recipe, but still hadn't gotten around to making it. She used pieces of Hershey's cookies and cream chocolate, and I had a bag of the same type but Hershey's Kisses rather than in bar form. When the letter for this month's Alphabakes turned out to be K, I decided this was a good excuse to make the brownies!

You need:
200g butter
375g caster sugar
170g dark chocolate
165g flour
80g cocoa powder
1/2 tsp salt
2 tsp vanilla extract
4 eggs
about 150g Hershey's Cookies and Cream Kisses

Melt the chocolate and the butter


When melted, stir in the sugar then remove from the heat


When the sugar has dissolved, add the eggs one at a time and beat in with a wooden spoon


Mix the flour and the cooca in a separate bowl


Here are the Hershey's Kisses I bought in America


Stir the kisses into the chocolate brownie mixture


Spoon into a lined square cake tin and bake at 180C for 30-35 minutes


The top always cracks when I make brownies - does anyone know why this is?


 Cut into squares - you can see the Hershey's Kisses inside. They gave a satisfying bite as they stay fairly solid. I took the brownies on a picnic and they went down really well!
