Grilled Cod with Jerk Spice

I love to eat fish but usually buy salmon, tuna or even something like mackerel – I get very bored with white fish as it can taste very plain. I found this recipe on Cooking Channel TV for grilled mahi mahi (a fish also known as dorado, which I’ve only ever had on holiday before) with jerk spice that I thought would work well with cod.
 
I thought I'd share what I made following this recipe with you - it may not photograph particularly well but it tastes good!
 
 
Scallions are spring onions in UK English- and the spices are all widely available in supermarkets, and mixing them is a bit more satisfying than just buying a jar of jerk seasoning. It’s very easy to make the marinade – just put everything together in a food processor!
 
The best way to cook the fish is to then grill it – serve with a green veg.

Jerk Fish



I went through a phase recently of cooking a lot of recipes from the Giraffe cook book and I was intrigued by the recipe for jerk fish with lime and garlic jerk butter, as I've come across jerk chicken before but not jerk fish. I decided to try out the recipe, but I didn't make the butter or the coconut rice that the book suggests serving it with.

To serve one, you need:
1 spring onion
1/4 red pepper, chopped
1/2 tsp ground allspice
1/2 tsp fresh thyme
1/4 tsp ground cinnamon
1/4 tsp grated nutmeg
1/2 tbsp brown sugar
1/2 tbsp malt vinegar


Chop the spring onion and pepper and combine in a bowl


Add the herbs and spices and season


Finally add the brown sugar and vinegar and mix well


Take a piece of white fish - I used monkfish


Marinade the fish in the sauce for an hour


You can grill, oven cook or fry the fish, whatever you prefer


I served it with some new potatoes and vegetables -it was a nice zesty change, and would also go well with rice.
