Green & Black's Chocolate Peanut Butter Pie

I made this a little while ago when I had friends over to dinner. It's from the Green & Black's recipe book Ultimate Chocolate Recipes - the New Collection.

You need:
100g butter
100g dark chocolate
2 tbsp strong coffee
ready made sweet shortcrust pastry base
50g cream cheese
40g icing sugar
100g smooth peanut butter
30ml milk
175ml double cream

Melt the butter and chocolate in a bain marie or microwave

Whisk in the coffee and leave to cool a little

Roll out the pastry and line a loose-bottomed cake or pie tin.

Fill with baking beans and bake for about 15 minutes until the pastry case starts to turn golden.

Remove the baking beans and leave to cool. Pour the chocolate mixture into the pastry case.

Whisk the cheese, icing sugar,m peanut butter and milk until combined

Whip the cream until you have soft peaks, then fold in the peanut butter mixture.

Spoon the mixture into the pastry case on top of the chocolate

Smooth the top and chill in the fridge for 4-5 hours or overnight.

Remove from the tin to serve. This was a really nice, rich dessert but I found the coffee flavour a little overpowering (I don't particularly like coffee) and would leave it out next time.
